I came up with a recipe for a hearty breakfast casserole that I make every Sunday morning before church. If I’m on top of things, I’ll do some prep work ahead of time:
- At the very least, I’ll start defrosting 1 lb of sausage on Friday evening.
- If I’m really good, I’ll cook the sausage & onion before Sunday morning. My big goal? To cook a bunch of ground sausage and freeze it in 1 lb portions, ready for this casserole.
- It’s nice to have the cheese cubed and ready to toss in.Â It would be even nicer to have cubed cheese frozen for a couple of month’s worth of breakfast casseroles. 🙂
Sunday Morning Breakfast Casserole
1 lb ground sausage
1/4 onion, chopped
1/4 cup butter
2 cups cheddar cheese, cubed
1 cup other cheese, cubed (I like Jack or Swiss)
5 oz chopped spinach (I use frozen)
8 oz ham (no sugar), chopped, optional (sometimes we don’t add this in)
Cook the sausage and onion in half of the butter. Grease a 9×13 pan with the rest of the butter.
Whisk together the eggs and the spices in a medium bowl.
Put all ingredients into the prepared pan and top with the eggs.
Bake at 350 degrees for 40 to 50 minutes. This is a hearty meal for Sunday mornings, and easy! Pre-cook the sausage and onions & freeze, pre-cube the cheese and ham & freeze, and you’re set!
We usually have this with orange juice as a special Sunday morning treat! Our family leaves for church by 9:15 or 9:30 (or 9:45 if we’re running late!!), so I have to start prepping this by 7 am so that we have enough time to eat before we leave. It is best to have the sausage cooked ahead of time (it makes for a less stressful Sunday morning, and I don’t feel like I smell like sausage at church ;)), but even if the sausage is uncooked Sunday morning, it can be done!
