This meal doesn’t look very pretty, but it was very, very good. We have a hook over our fireplace for cooking with a cast iron pot. It swings out, and so the pot really sits kind of beside the fire rather than right over it, but it works well. It looks like this.
If I want to cook dinner with the cast iron pot (no electricity!), I have to start it by about 2 pm. That’s what I did yesterday with this fish.
We have an 8 quart cast iron dutch oven that has a metal handle so that it can hang over the fire. I layered the following inside of my pot:
2 large fillets of Albacore Tuna
1 cup of butter
2 cups of homemade chicken stock
generous amount of paprika
several tablespoons minced garlic
a bag of stir fry veggies (fresh)
1/2 cup minced onions (there were onions in the stir fry veggies, but I wanted more)
1 cup sliced mushrooms
1 1/2 cups yogurt
more tablespoons minced garlic
And then I topped it all with several cups of shredded cheddar cheese.
I started a good fire (the kids and I read about the people of James Town & a wife who would never let her fire go out…This inspired me to start a fire and cook over it ;)).
I hung my pot on the hook right next to the fire, and left it there (I started layering everything at 2 pm and set it up by the fire shortly after). At about 4 pm I carefully (with fireproof gloves) lifted the pot and turned it around on the hook so that the other side would cook.
I am not normally crazy about tuna, I think it’s a tougher fish with too much of a "fishy" flavor for me. But this version of tuna was VERY good.
I suppose, if you don’t have a cast iron dutch oven and a hook in your fireplace, maybe you can try this in a crockpot? It would be worth a shot! I would say, cook it on low for most of the day. Or on high for 4 or 5 hours, maybe. Try it!
