Farm Boy 1 (9 years old) helped me make these pancakes. They are so easy, I think he could manage them all on his own!
Easy No Grain Banana Pancakes
Vanilla (optional add in)
Cinnamon (optional add in)
3/4 cup Butter (for frying)
1/2 cup Honey (to drizzle, optional)
Heat up your skillet. I love my Lodge Cast Iron Griddle, that’s what you see the pancakes on in the background! I heat it up to medium-high.
Pull out your blender. I use my Vitamix and absolutely LOVE IT. TossÂ in the bananas, eggs, and whatever add ins you want (cinnamon, vanilla, or none!). Turn on the blender and let it puree.
Spread a generous portion of butter over your griddle, and then pour about 1/4 cup (or less) of batter down for each pancake. Make sure it’s not too hot that it’s burning, but hot enough that it cooks quickly (make sense?). I adjust the knobs often while I make pancakes. Let cook until there are small bubbles across the top of the pancake & it can easily flip. Flip over and cook for another minute or two.
Keep pancakes warm in the oven (at 170 degrees) while you make the rest. Drizzle with honey to serve, or eat plain. We’ve served these with blueberries & yogurt on top, and that was yummy, too. I’ve also packed these as an on-the-go breakfast without honey or toppings. They are easy to eat with your hands (and some napkins), aren’t messy, and are sweet enough on their own.
